Does blood sugar rise less with vegetables first?
Yes, about 22 lower at 30 minutes
An analysis that pooled 18 trials found that eating vegetables first lowered blood sugar by about 22 at 30 minutes and about 9 at 60 minutes after the meal (in the units where normal fasting is under 100). At 2 hours it was about 4 higher. The spike was smaller and came down more slowly. Another review of 107 people pointed the same way.

So does weight come off too?
No difference after 16 weeks
45 people were split for 16 weeks: one group got standard diet advice, the other also got 'carbs last' food-order advice (39 finished). The food-order group ate 1 more cup of vegetables a day. Weight fell 1.6 kg (1.8%) in the food-order group and 1.2 kg (1.6%) in the standard group, with no difference.

42 people ate a salad before pasta. A low-calorie salad, with less dressing and cheese, cut total meal calories by 7-12%. A salad heavy on dressing and cheese raised them by 8-17%. The gap was biggest with a large 300 g bowl.
